Forget modern restaurants, your dining table is a wooden bench in front of a stone hut, and your chefs are the local hosts themselves. The Star of the North is Kolašin Layered Cheese. This cheese is a global phenomenon—water-thin, translucent layers that melt in your mouth. You will learn the art of making this delicacy, which is protected by geographical indication, and discover why it is impossible to replicate anywhere outside the Kolašin region.
No visit to the mountain is complete without "smočani" kačamak. Made from local potatoes, flour, and the finest cheese and cream (kajmak), this dish provides enough energy for three days of hiking. You will also enjoy cicvara, a rich, buttery dish that smells of tradition and hospitality.
The aroma of fresh bread baked under a glowing metal lid (sač) mingles with the scent of beef or pork prosciutto, cured in the crisp mountain air.
Finish your meal with a handful of wild blueberries or raspberries picked right by the trail, paired with a glass of homemade sour milk so thick it is eaten with a spoon.
Everything begins and ends with a glass of homemade plum or pear brandy (rakija), accompanied by the hosts' stories about mountain life, wolves, and the legends of Bjelasica.
